Classified as a Swiss-type or Alpine cheese and is sweet but slightly salty, with a flavour that varies with age. Fantastic as a ham & cheese to a chicken or veal cordon bleu. It is used in salads, and large-grate over pastas. White wines, such as Riesling, pair well. Sparkling cider and Bock beer are also suggested pairings.
